Bengali Vegetable Pulao Recipe

Today I like to share a very delicious recipe from Bengal, which is Bengali Vegetable Pulao Recipe. This is a very tasty and delicious Pulao recipe. Bengali Vegetable Pulao is a very popular rice dish among Bengali’s. This Pulao recipe is prepared in almost on all occasions. Bengali Vegetable Pulao is prepared with Basmati rice ,which help this dish to get more aromatic. I have prepared this dish with panner or cottage cheese, carrot, french beans,green peas, cashew and raisin, however you can add cauliflower, sweet corns or any of your favorite vegetables.

This Indian Pulao or Bengali Vegetable Pulao Taste mild sweet and this rice dish can be served with any spicy vegetarian curry or non vegetarian curry. Ingredients

 

Basmati Rice : 600 gm

Paneer : 100 gm

Carrot : 1 cup cut into cubes

French Beans : 1 cup cut into half inch

Green peas : 1 cup

Cashew : Half Cup

Raisin : Half Cup

Ghee : 4 tbsp

Cinnamon sticks : 2

Cardamom pods : 4-5

Cloves : 4-5

Bay leaves or Tej patta : 2

Green chilli : 2 chopped

Oil : 2 tbsp

Salt : To taste

Sugar : 2 tbsp (you can adjust with your taste)

Water : if 600 gm rice is equal to 4 cups than the water will be 7 same size cup. The water level should be 2 inch above rice.

Method

  1. Wash the rice properly and soak it in water for half an hour.
  2. Heat oil and ghee in a deep vessel. Fry the cashew till light brown and keep it aside.
  3.  Cut the panner into small cubes and fry it till light brown in colour. Keep it aside.
  4. Soak the raisin in water for 10-15 mins.
  5. In the same ghee oil , add bay leaves, cinnamon sticks, cardamom pod and cloves. Fry for 30 sec.
  6. Drain the water from the rice and add the rice in the ghee. Fry for 2 mins on medium flame.
  7. Add cubes carrot and french bean. Fry for 1 mins.
  8. Add water, salt and sugar. Mix well with spatula and cover till it starts boiling.
  9. Then add the green peas and cover it and let it cook on medium flame for 10 mins or till the water evaporates completely and rice is 90% cooked.
  10. Then Add fried cashew, raisin and fried paneer cubes. And Switch off the gas. Cover the vessel and keep it like that for another 10 mins.
  11. Then open the lid and add chopped chillis and lightly mix the rice with a spatula. Don’t over mix it otherwise the rice will break. You can add 1 tbsp ghee from top if needed.
  12. Again cover the lid and place something heavy on the top of the lid, so that the vapor get sealed inside the vessel. This process is called dum process. Keep it like that for another 10 mins. Now Bengali Vegetable Pulao is ready to serve.
  13. Serve this delicious aromatic Pulao with any spicy veg or non veg gravy dish.
